Scrumptious red velvet cupcakes

Scrumptious red velvet cupcakes with cream cheese topping.  The topping gives it the added kick.
Red velvet flavour is gaining a lot of popularity.  I did not realise what all the fuss was about until i tasted Hummingbird red velvet cupcakes.  After that i  set to improve my recipe and after about 4 attempts i created a recipe that tickled my taste buds.  Colour of red velvet cupcakes varies, from a very bright red to a deep browny red, mine is somewhere in between. i add just a bit of cocoa powder some the chocolate flavour is quite subtle.  I have sold cupcakes at work to raise money for various charities and red velvet tends to sell out the fastest.  I am somewhat addicted to red velvet flavour.
